Olivia and I picked apples yesterday – two bags full – so I had to figure out what to do with them all. Dan is usually the ‘pie baker” (or everything baker) in this family, so I was quite intimidated about the prospect of baking something. However, with Olivia’s help we successfully baked a scrumptious apple cake (apple pie was just too advance for me!).
I originally bulked at Dan buying this apple corer…and I actually never used it before. However, Olivia had and she taught me how, lol. Wow, what a cool little contraption! It was actually fun to peel apples with this thing!
Olivia, of course, had a great time mixing in all the ingredients and sampling it all as we went along. She helped every step of the way. When the cake came out of the oven and we were able to sit down and enjoy your creation, she said to me, “Mommy, it’s so relaxing to share an apple cake with you on this day.” LOL – where does she come up with these things…just too cute. Well, that made it all worth it — and heck it wasn’t all that bad…except cleaning up the horrendous mess in the kitchen afterwards!
